Spaghetti Carbonara

Carbonara Pasta - in 15 minutes ✅ Ingredients (for 2 servings) Pasta (spaghetti or rigatoni) — 200 g Pancetta or guanciale — 100 g (diced) Eggs — 2 whole eggs + 1 yolk Parmesan — 50 g (grated) Black pepper — freshly ground, generously Salt — for water 🚫 No cream, garlic, onion - only the truth. 🔪 How to cook Boil the pasta in heavily salted water for 1-2 minutes less than indicated on the package. Fry the pancetta over medium heat for 5 minutes until golden brown. Remove from heat. In a bowl, whisk together eggs + yolk + parmesan + pepper — until a homogeneous mass. Drain the pasta , but do not rinse! Quickly toss hot pasta with pancetta — heat will melt the fat. Take it off the heat! Pour in the egg and cheese mixture, stirring quickly to prevent the eggs from scrambling. If it's a bit dry, add 1-2 tbsp of pasta water. ✅ Done. Serve immediately. Sprinkle with more Parmesan and pepper.
